Broccoli Soup Ingredients
The best broccoli soup for weight loss contains one onion, one clove of garlic, 2lb of broccoli, 4 cups of fat-free chicken or vegetable, broth, 1 cup of fat-free evaporated milk, and ¼ tbsp of hot pepper sauce.
Broccoli Soup Method
First, you will need to prepare your ingredients. Chop up your onion, mince your garlic cloves, remove the tough ends of your broccoli and chop them up. Then you can start making your broccoli soup.
Place your onion in a small pan with just enough water to cover the top (¼ of a cup) of it and let it simmer until the onion is soft. This should take about 10 minutes. Then you can transfer the onion to a different pan and add in the broccoli and broth. Bring this mixture to the boil, then reduce the temperature and allow it to simmer until the broccoli is soft – this should take about 8 minutes. You should allow the air to get to the broccoli (so don’t put the lid on it), or else it will turn gray!
You now have your cream of broccoli soup mixture ready for blending – either transfer the contents of the pan into your blender or use your handheld blender in the pan. Whilst you’re blending, add in the evaporated milk and hot pepper sauce and any salt and pepper to taste. Wait for it to cool slightly as it will be piping hot.
